
There is a lot of different khao soi dishes across Southeast Asia. The Lao style is a noodle soup with thick strands of rice noodles topped off with pork soy bean sauce and clear broth. I just love watching the red sauce diffuse through as I mix the noodles.
Khao Soi Lao

Ingredients
Broth
- 2 lbs pork bone
- 3 quarts water
- 1 in stalk ginger
- 3 coriander cilantro root (can be found in frozen section of Thai grocery stores)
- 1 medium onion
- 1 garlic head
- 2 tsp salt
Pork Sauce
- 1 tbsp vegetable oil
- 1 tbsp red curry
- 2 roma tomatoes
- 1 cup ground pork
- 2 tbsp yellow soybean paste
- Pinch black pepper
- Pinch salt
Serve With
- 1 lbs wide rice noodles
- 2 tbsp dried Thai chili powder
- 1 packages of bean sprout
- 1 bundle of cilantro
- 1 green onion bundle
- 1 lime
- Fish sauce to taste
Instructions
- Blanch bones for 10 minutes.
- Combine the bones, ginger, cilantro root, onions, garlic, and salt. Let the broth simmer for 1 hour with a lid.
- Make the pork sauce: Heat vegetable oil in a saute pan and saute red curry for 1-2 minutes. Add the diced tomatoes until they are soft and broken. Add the pork, yellow soybean paste, black pepper, and salt.
- Stir to smooth out the clusters of ground pork.
- Reduce to low and simmer for 10 minutes.
- Assemble: cook the noodles, ladle broth over cooked noodles, add ½ cup pork sauce. Top with green onions, peppers, cilantro, bean sprouts, lime, and fish sauce to taste
