Laab Gai

The unofficial national dish to Laos, laab gai. There are many variations of laab, and here is the chicken version.

  • 1 lb ground chicken
  • 1/2 cup chicken skin
  • 1 tbsp sticky rice powder
  • 1 tbsp padaek
  • 1/2 tbsp fish sauce
  • 1 tbsp fresh bird eye chili diced
  • 1 tbsp galangal minced
  • 1 tbsp lime leaves minced
  • 3/4 lime juice
  • 1/2 cup bean sprouts
  • 1/2 cup mint leaves
  • 1/2 cup cilantro diced
  • 1/2 cup shallots diced
  • 1/2 cup green onion diced
  • 1/2 cup fried chicken skin


  • Heat a skillet and add a little vegetable oil then cook ground chicken. Let the chicken cook for a bit.
  • In a separate pan, heat oil and fry the chicken skin until brown and crispy.
  • Toss the chicken in a large bowl, add rice powder, padaek, and fish sauce. Add more fish sauce to taste. Mix gently with hands
  • Add chili, galangal, lime leaves, lime juice, bean sprouts, mint, cilantro, shallots, green onion, and fried chicken skin. Mix gently and plate.
  • Eat with sticky rice or as lettuce wraps.
