Khai being is a delicious and healthy food from Laos and it can be eaten anytime! Make sure to cook dozens of these eggs at once so you maximize the cooking. You may find other variations of these eggs that are yellow with different seasoning. Think of these eggs as a hard boiled omelette. I don’t add any sauces to baked eggs because egg is very sensitive to seasonings so I usually eat these with a fish sauce spicy dip.
