I didn’t eat this as a kid but I encourage you to try it as an adult since your taste buds have probably changed and you will love it!

  • get a lean cut like a steak to make laab; you want to avoid fatty cuts

  • the freshest herbs make this dish pop and add a little bile since it goes a long way

  1. Roughly dice up meat
  2. In a large bowl add the meat, fish sauce, unfiltered fish sauce, beef bile, ½ tsp msg, and mix
  3. Add cooked tripe and sticky rice powder, crushed dried chili pepper, lime leaves, galangal, lime, and mix
  4. Shallots, green onions, cilantro, and mix
