Lao Laab Stuffing with Lao Spices
Create a Lao-style stuffing infused with traditional flavors like toasted sticky rice powder, green onions, cilantro, and more. This recipe combines the classic Laab taste from Lao Spices with unconventional but delightful butter ingredients. Be sure to make extra, as it's bound to be a Thanksgiving favorite!
PREPARING THE INGREDIENTS
Since this recipe has several ingredients, it will save you a lot of time by preparing all the ingredients ahead of time. Make sure to have all the following items cut up as seen in the photos below: kabocha pumpkin, shiitake mushroom, green onions, cilantro, onion, garlic, and cilantro.
SERVING LAO LAAB STUFFING
When making this kind of stuffing, I recommend making it in a pan and not cooking it in your turkey as it is hard to control the moisture of the stuffing. If you want to put it in the turkey, I recommend stuffing the turkey after both the turkey and stuffing is fully cooked. Once the dish is done, garnish it with some herbs and even some slices of bird eye chilies if you’re feeling extra spicy. The top of the stuffing will be crunchy and the inside will be a little more moist so make sure to mix it around to get an even amount of both textures.
TIPS & TRICKS TO MAKE THE BEST LAO LAAB STUFFING
With any stuffing recipe, the bread should always be hard. If you’re using a baguette, it should get to the right dry texture in one day.
For the chicken broth, I love using the Asian branded salted chicken broth as there is something extra umami and special about it; most likely the MSG in there. It makes a big difference.
I used shiitake mushrooms instead of other mushrooms as this mushroom is full of flavor helps bring out more of a flavor bomb with every bite.
Be careful not to over soak the bread. Pour in half of the chicken broth and lightly soak and stir the mixture. Everything should be lightly most and not drenching in chicken broth.
STORING AND REHEATING
Make sure to double this recipe as you will want to have left overs since your turkey will probably be large. Place the left overs in an airtight container in the refrigerator for up to 5 days.
To reheat, microwave it for 1 to 2 minutes until warm.

- In a large pan, melt butter, sauté garlic briefly, then add onions. Cook until translucent (3-4 mins), then add shiitake and cook briefly. Add kabocha, celery, and cook until soft (about 5 mins). Season with Lao laab blend.
- In a large bowl, combine cubed bread, green onions, cilantro, and veggie mixture. Toss well.
- Slowly add chicken broth until cubes are lightly coated. Season with salt, pepper, and more Lao laab if desired.
- Place in a pan and bake at 350°F, covered with foil, for 30 mins, then uncovered for 15 mins. Enjoy your flavorful Lao-style stuffing!
